Apple and Pear Muffins with Apple Jam

The delicious, fruity combo of apple and pear makes these muffins irresistible.  They are easy to make and accompanied with a sweet and speedy apple jam they are unique and sure to impress guests!

Apple and Pear Muffins with Apple Jam

FOR THE MUFFINS
  1. 150 g sugar
  2. 125 g margarine
  3. 1 mashed pear (from tin)
  4. 100 ml soya milk*
  5. 50 ml pear juice (from tin)
  6. 1/2 tsp vanilla essence
  7. 250 g plain flour
  8. 15 g baking powder
  9. 1/2 apple, peeled and finely chopped
FOR THE APPLE JAM
  1. 2 large apples, peeled and finely grated
  2. 4 dessert spoons sugar
Instructions
  1. Preheat the oven to 190 C fan and start by creaming together the sugar and margarine, followed by mixing in the wet ingredients.
  2. Once combined, in a separate bowl sift together the flour and baking powder. Carefully mix into the bowl of wet ingredients. Finally mix in the apple and spoon into individual muffin cases.
  3. Bake for 20 minutes.
  4. Whilst baking, you can prepare the jam; add the apples and sugar into a small, non-stick pan and simmer on a low heat for 10 minutes. Keep stirring. Take off the heat and allow to cool before transferring the jam to a pot.
  5. Serve with a generous dollop of the sweet apple jam and enjoy!
Notes
  1. * use almond or other dairy-free milk to make this soya-free
  2. The jam should be kept in an airtight container in the fridge (for no longer than a week).
  3. The muffins should last a good few days; if you don't get through them they freeze well!
