Balsamic Onion Pizza with Tofu Feta

Ever fancy a pizza but you know you’ll miss the cheese?  We’ve been experimenting with lots of different cheese alternatives and whilst there are some great products that you can buy, it’s nice to have a simple, tasty recipe that you can make yourself.  This tofu ‘feta’ is a great pizza topper and works well alongside the vegetables and sweet but tangy balsamic onions.

FOR THE PIZZA BASE (makes two thin bases or one thick base)
  1. 375 g plain flour
  2. 7g fast-action dried yeast
  3. 1 tbsp sugar
  4. 1 tsp salt
  5. 225 ml water
FOR THE TOPPINGS
  1. 1/2 tin chopped tomatoes
  2. 1/2 punnett of white mushrooms
  3. 1 small courgette
  4. 1 leek
  5. 1 medium red onion
  6. 1 tbsp vegan margarine
  7. 1 dssp sugar
  8. 1 dssp balsamic vinegar
FOR THE TOFU FETA
  1. half a block of firm tofu, drained and pressed
  2. 1 tbsp silken tofu
  3. 2 tbsp pine nuts
  4. 1/4 tsp of the following spices
  5. garlic powder
  6. paprika
  7. onion powder
  8. parsley
  9. salt
  10. pepper (optional)
FOR THE TOFU FETA
  1. In a small food processor, combine the tofu, silken tofu, spices and pine nuts. Pulse until everything is combined but still has a bit of texture. Set aside until you're ready to top the pizza.
FOR THE BASE
  1. Preheat the oven to 180 C fan. Start by mixing the flour, salt, sugar and yeast in a large bowl followed by lukewarm water. Knead for 5-10 minutes until the dough is smooth and elastic but not sticky. Stretch out onto one or two baking trays, depending on how thick you want the base to be.
FOR THE TOPPING
  1. Cover the base(s) with the chopped tomatoes and then add the sliced courgette and mushrooms. Add the tofu feta and pop in the oven for 15 minutes.
  2. Meanwhile, finely chop the leek and fry in a little oil, on a low heat. Stir occasionally until the pizza is cooked.
FOR THE BALSAMIC ONIONS
  1. You should start the onions 5 minutes after your pizza goes into the oven. Slice the onion and add to a small non-stick pan with the margarine. Cook for 5 minutes before adding the sugar and vinegar. Cook for a further 5 minutes whilst stirring occasionally. Take your pizza out of the oven and top with the onions and leek.
  2. Enjoy hot or cold!
