Quesadillas with ‘Cheese’ Sauce

You don’t need cheese to make a great-tasting quesadilla.  In fact, avoiding the cheese makes this meal a lot healthier and lower in fat.  However, with fresh veg sautéed in a mix of spices and our homemade sauce, you won’t miss out on that cheesy flavour!  Serve them up with some mashed avocado to complete the dish.

Ingredients
  1. 6 tortilla wraps*
FOR THE 'CHEESE' SAUCE
  1. 1 1/2 red bell peppers, roasted at 200 C fan, for 15-20 mins (until soft)
  2. 1/2 cup soya/rice cream
  3. 1/4 cup pine nuts**
  4. 1/4 cup silken tofu
  5. 3 tbsp nutritional yeast
  6. 1 small clove garlic, minced
  7. 1/8 tsp mustard powder
  8. dash of lemon juice
  9. salt and pepper to taste
FOR THE FILLING
  1. 1 yellow bell pepper
  2. 1 red bell pepper
  3. 1 large red onion
  4. paprika, to taste
  5. chilli powder, to taste
  6. cumin, to taste
  7. 2/3 can refried beans
TO SERVE
  1. finely chopped chives,
  2. 1-2 mashed avocados
  3. small handful of chopped black olives
  4. squeeze of vegan mayo
FOR THE 'CHEESE' SAUCE
  1. Add all of the ingredients into a blender and blend on high until the consistency is smooth. Set aside ready to serve.
FOR THE QUESADILLAS
  1. Chop the peppers and onion into large pieces and fry in hot oil until softened (5-10 mins). Add the spices and lower the heat. Fry for a further 2 minutes and then set aside.
  2. Heat a small amount of oil in a large non-stick frying pan. Spread the refried beans onto one side of one of the tortillas and place into the frying pan (with the refried beans facing up). Add one third of the spiced vegetable mixture on top of the tortilla, along with a drizzle of the 'cheese' sauce. Place another tortilla on top and flip after a minute. Fry the other side for a further minute, until crispy. Take it out of the pan and use a pizza cutter to slice it into quarters. Serve with an extra drizzle of the sauce, a squeeze of mayo and a garnish of the olives and chives.
  3. Repeat with the remaining tortillas and and vegetable mixture.
  4. Enjoy hot or cold!
Notes
  1. * Use gluten-free tortillas to make this dish gluten-free
  2. **despite the name, pine nuts are actually seeds and most nut-allergy sufferers can eat pine nuts.
