Guacamole and Tomato Spaghetti

This is such an easy dish to do, you can whip it up in under 15 minutes!  You hardly need any ingredients either; give this recipe a go the next time you’re stuck for lunch ideas and want a quick, tasty and filling meal.

Guacamole and Tomato Spaghetti

Ingredients
  1. 150 g gluten-free spaghetti
  2. 1 ripe avocado, we used Hass
  3. 1/2 cup cherry tomatoes
  4. 15 sun-dried tomatoes
  5. 2 tsp paprika
  6. 1 tsp garlic powder
  7. salt and pepper, to taste
  8. vegan ham slices, optional
Instructions
  1. Add the pasta to a pan of boiling water, with a pinch of salt. Cook for 10 minutes.
  2. Whilst the spaghetti is cooking, mash the avocado and stir in the seasoning. Drain the sun-dried tomatoes and chop, along with the fresh cherry tomatoes. Add to the avocado mixture.
  3. Drain the pasta and then mix in the guacamole sauce. Serve with an extra sprinkle of smoked paprika and some vegan ham slices, shredded (if using) and enjoy!
