Beef-Style Burgers with Spiced Tomato Mayo

Beef-Style Burgers with Spiced Tomato Mayo

FOR THE BURGERS
  1. 2 cups soya mince
  2. 1 red onion
  3. 1/2 punnet white mushrooms
  4. 1/4 cup mixed seeds
  5. 1/4 cup plain flour
  6. 1 tbsp soya sauce
  7. 1/2 tbsp brown sauce
  8. 1/2 tsp salt
  9. 1/2 tsp black pepper
  10. 1 tsp garlic powder
  11. 1 tsp onion powder
  12. 1 tsp paprika
  13. 1 tsp chilli powder
FOR THE SPICED TOMATO MAYO
  1. 60 ml unsweetened soya milk (at room temperature)
  2. 120 ml sunflower oil
  3. 1 tsp apple cider vinegar
  4. 1/2 tsp salt
  5. 1/4 tsp xanthan gum (be cautious as this is potent stuff)
  6. 2 1/2 tbsp tomato ketchup
  7. 1/4 tsp chilli
  8. 1/4 tsp paprika
  9. 1/4 tsp garlic powder
FOR THE BURGERS
  1. Combine the mushrooms and onion in a food processor before transferring to a large frying pan with a splash of olive oil. Add the soya mince and fry together for 10 minutes. Transfer to a large mixing bowl along with the remaining ingredients and mix until well combined.
  2. Shape into 4 large patties and fry in hot oil for 5-10 on each side, until they have turned a deep brown colour.
FOR THE SPICED TOMATO MAYO
  1. Using a hand blender or a small food processor, blend the soya milk, oil, vinegar, salt and xanthan gum until the mixture emulsifies. Then add the ketchup and spices and blend again. Refrigerate until ready to use**.
ASSEMBLY
  1. Using some crispy salad and freshly baked burger buns, assemble your burgers with a generous dollop of mayo and a side of wedges.
Notes
  1. * xanthan gum is a great thickener; if you leave it out then this recipe works well as a salad dressing
  2. ** refrigerate for up to a week
